雪花糕


呵呵...
又是令我感覺喜氣洋洋的中式甜點..
這雪花糕啊..
一定要如其名-----如雪花般的糕點..
蓬鬆軟滑..入口即化..才是箇中極品啊....
夏天裡...一入口還要有清涼的爽口感..
朋友說..要管這叫做六月雪..
所以請冰涼後食用!!!!^^

不過....這裡可沒有人有沉冤需要得雪..呵呵

i m sorry for late..here is the recipe:
Snowflake Cake ^_^
洋菜粉1小匙.蛋白3個.細砂糖3/4杯.水4杯.玉米粉7大匙.奶水1杯.椰子粉適量
1teaspoon agar powder,
3x egg white, 3/4 cup icing sugar, 4cup water, 7 tablespoon corn starch, 1cup evaporated milk, coconut powder to taste
1.玉米粉+份量外的1/2杯水攪勻
Mix corn starch with 1/2 cup water thoroughly
2.洋菜粉+4杯水煮融化在+糖煮溶.
Melt agar powder in 4 cups of water with heat. Add sugar and mix well
3.接著加入奶水.玉米粉水.煮成稠狀.要不停的攪拌.否則底部會焦掉.
Then add evaporated milk, corn starch mixture. Cook until thick, be sure to stir continuously to prevent burns at the bottom.
4.蛋白打發.至硬性發泡.將第3項的材料加入攪拌均勻
Beat the egg white until foamy. Add ingredient from step 3 and mix well.
5.到入模子裡放涼變硬.即可分割沾上椰子絲粉
Pour into mold and allow to cool and firm. Cut and sprinkle with coconut powder.

3x egg white, 3/4 cup icing sugar, 4cup milk or coconut milk , 7 tablespoon corn starch, 1cup cream, coconut powder to taste

need to bother u again. the milk/coconut, evaporated milk and corn starch mixture have to cook till thick u said. is it cook till very very thick like custard?? And also the egg white beat till what stage?? Stiff stage?? what u use to beat the egg white?? electric mixer or balloon whisk.

i ask so many question bcoz i failed making it.
firstly, my milk/coconut, evaporated milk and corn starch mixture is not thick enough.
secondly, i beat my egg white with electric mixer till stiff stage.
and when i pour the hot milk mixture into egg white, the whole thing can't combine well, not smooth.

please help
